Tomato Basil Soup
Fresh tomato soup with basil served with a grilled cheese on the side.
Ingredients
- 6.00 l arge ripe tomatoes , halved
- 1.00 onion , quartered
- 4.00 cup loves garlic
- 3.00 tbsp olive oil
- 4.00 cup chicken broth
- 0.50 cup heavy cream
- 0.25 cup fresh basil leaves
- salt and pepper
- croutons
Instructions

Preheat oven to 400°F.

Toss tomatoes, onion, and garlic with olive oil on a baking sheet.

Roast 35-40 minutes until caramelized.

Transfer to a pot and add broth.

Simmer 15 minutes.

Add basil and blend until smooth.

Stir in cream and season with salt and pepper.

Serve with croutons.
