Sweet Potato Pancakes
Fluffy pancakes made with mashed sweet potato and warm spices.
Ingredients
- 1.00 cup mashed sweet potato
- 1.50 cup all-purpose flour
- 2.00 tsp baking powder
- 0.50 tsp cinnamon
- 0.25 tsp nutmeg
- 0.25 tsp salt
- 2.00 l arge eggs
- 1.00 cup whole milk
- 3.00 tbsp butter
- 2.00 tbsp brown sugar

Whisk together flour, baking powder, cinnamon, nutmeg, salt, and brown sugar.

In another bowl mix mashed sweet potato, eggs, milk, and melted butter until smooth.

Pour wet into dry and stir until just combined.

Heat a greased griddle over medium heat.

Pour 1/4 cup batter per pancake.

Cook until bubbles form and edges look set, about 3 minutes.

Flip and cook 2 more minutes.

Serve with maple syrup and butter.
