Deer Roast
Slow-roasted venison shoulder with root vegetables and herbs.
Ingredients
- 3.00 lb venison roast
- 0.25 cup apple cider vinegar
- 4.00 cup loves garlic , sliced
- salt , pepper, and thyme
- 1.00 onion , quartered
- 3.00 cup arrots , chunked
- 3.00 potatoes , quartered
- 2.00 cup beef broth

Marinate roast in vinegar 2 hours to mellow gamey flavor.

Make small slits and insert garlic slices.

Season with salt, pepper, and thyme.

Brown all over in oil in a Dutch oven.

Add onion, broth, carrots, and potatoes.

Cover and braise at 325°F for 2 1/2 to 3 hours until tender.
