Sweet Potato Hash
Diced sweet potatoes, onions, and peppers sauteed with country sausage for a hearty morning meal.
Ingredients
- 2.00 l arge sweet potatoes , peeled and diced
- 1.00 g reen bell pepper , diced
- 1.00 onion , diced
- 3.00 cup loves garlic , minced
- 0.50 lb breakfast sausage
- 2.00 tbsp vegetable oil
- 1.00 tsp paprika
- 0.50 tsp cumin
- salt and pepper
- 4.00 l arge eggs
Instructions

Heat oil in a large cast iron skillet over medium-high heat.

Add diced sweet potatoes and cook 8-10 minutes, stirring occasionally, until starting to soften.

Add bell pepper, onion, and garlic and cook 5 more minutes.

Push vegetables to the side and brown sausage, breaking into pieces.

Mix everything together and season with paprika, cumin, salt, and pepper.

Make 4 wells in the hash and crack an egg into each.

Cover skillet and cook until eggs are set, about 5 minutes.

Serve directly from the skillet.
