Succotash Soup
A hearty soup version of Southern succotash with lima beans, corn, and tomatoes.
Ingredients
- 2.00 cup fresh or frozen corn
- 2.00 cup fresh or frozen lima beans
- 1.00 lb smoked sausage , sliced
- 1.00 onion , diced
- 3.00 cup loves garlic , minced
- 1.00 cup an tomatoes
- 6.00 cup chicken broth
- 2.00 tbsp butter
- salt , pepper, and thyme to taste
Instructions

Melt butter in a large pot over medium heat.

Brown sausage and remove.

Sauté onion until softened.

Add garlic and cook 1 minute.

Add corn, lima beans, tomatoes, and broth.

Return sausage to pot.

Season with salt, pepper, and thyme.

Simmer 30 minutes until vegetables are very tender.

Adjust seasoning and serve hot.
