Stack Cake
Thin gingerbread layers stacked with spiced dried apple filling.
Ingredients
- 3.00 cup all-purpose flour
- 0.50 cup sugar
- 1.00 tsp baking powder
- 1.00 tsp baking soda
- 0.50 tsp salt
- 0.50 cup butter
- 0.50 cup buttermilk
- 1.00 l arge egg
- 0.25 cup sorghum
- filling: 3 cups dried apples cooked with brown sugar cinnamon and cloves until very soft

Preheat oven to 350°F.

Cream butter and sugar.

Beat in egg and sorghum.

Add buttermilk alternately with flour mixture.

Divide dough into 6 portions.

Roll each thin and bake on greased baking sheets 10-12 minutes.

Layer cake rounds with apple filling between each layer.

Wrap tightly and refrigerate overnight — layers absorb moisture from filling and become moist and cake-like.
