Ingredients

  • 3.00 cup sugar
  • 0.75 cup cocoa powder
  • 0.13 tsp salt
  • 1.50 cup whole milk
  • 4.00 tbsp butter
  • 1.50 tsp vanilla extract
  • 1.00 cup pecans

Instructions

    Butter an 8x8 baking dish.

    Combine sugar, cocoa, salt, and milk in a heavy saucepan.

    Bring to a boil over medium heat, stirring until sugar dissolves.

    Cook without stirring until mixture reaches 235-240ยฐF on a candy thermometer.

    Remove from heat.

    Add butter and vanilla but do not stir.

    Cool to 110ยฐF without disturbing.

    Beat vigorously until fudge thickens and loses its gloss.

    Stir in pecans if using.

    Pour into prepared dish.

    Cool until firm.

    Cut into squares.
