Southern Potato Salad
Creamy potato salad with hard boiled eggs, celery, mustard, and Duke's mayo.
Ingredients
- 6.00 medium potatoes , peeled and cubed
- 0.50 cup mayonnaise
- 2.00 tbsp yellow mustard
- 2.00 tbsp sweet pickle relish
- 3.00 hard boiled eggs , diced
- 0.25 cup celery
- 0.25 cup onion
- salt and pepper
- paprika
Instructions

Boil potatoes in salted water until just tender, about 15 minutes.

Drain and let cool completely.

Mix mayonnaise, mustard, and pickle relish together.

Combine cooled potatoes, eggs, celery, and onion.

Fold in dressing gently.

Season with salt and pepper.
