Southern Lamb Stew
Tender lamb slow cooked with root vegetables and Southern herbs.
Ingredients
- 2.00 lb lamb stew meat
- 0.25 cup flour
- 3.00 tbsp vegetable oil
- 1.00 onion , diced
- 4.00 cup loves garlic , minced
- 3.00 cup arrots , diced
- 3.00 potatoes , diced
- 4.00 cup lamb or beef broth
- 1.00 cup red wine
- rosemary , thyme, salt, and pepper
Instructions

Season lamb with salt and pepper and dust with flour.

Brown in batches in hot oil.

Remove and set aside.

Sauté onion until softened.

Add garlic, rosemary, and thyme and cook 1 minute.

Return lamb with broth and wine.

Bring to boil then simmer covered 1 hour.

Add carrots and potatoes.

Cook 45 more minutes until all is very tender.

Adjust seasoning and serve.
