Southern Crepes
Thin delicate crepes filled with whipped cream and fresh peach preserves.
Ingredients
- 1.00 cup all-purpose flour
- 2.00 l arge eggs
- 1.50 cup whole milk
- 2.00 tbsp butter
- pinch of salt
- filling: 1 cup ricotta cheese , 1/4 cup honey, 1 tsp vanilla
- fresh berries and powdered sugar
Instructions

Blend flour, eggs, milk, melted butter, and salt until smooth.

Rest batter 30 minutes in the refrigerator.

Heat a 9-inch nonstick skillet over medium heat and lightly grease.

Pour 1/4 cup batter into center, swirling to coat pan.

Cook until edges lift and bottom is lightly golden, about 1 minute.

Flip and cook 30 seconds more.

Mix ricotta, honey, and vanilla for filling.

Spread filling on crepes and fold into quarters.

Serve with fresh berries and powdered sugar.
