Southern Beet Salad
Roasted beets with goat cheese, pecans, and a honey vinaigrette.
Ingredients
- 4.00 medium beets , roasted and sliced
- 4.00 oz goat cheese crumbled
- 0.50 cup pecans , toasted
- 6.00 cup mixed greens
- dressing: 3 tbsp olive oil , 2 tbsp balsamic vinegar, 1 tsp honey, salt and pepper
Instructions

Roast beets wrapped in foil at 400°F for 45-60 minutes until tender.

Cool, peel, and slice.

Arrange mixed greens on a platter.

Top with sliced beets, crumbled goat cheese, and toasted pecans.

Whisk together dressing ingredients.

Drizzle over salad.
