  • 4.00 medium beets , roasted and sliced
  • 4.00 oz goat cheese crumbled
  • 0.50 cup pecans , toasted
  • 6.00 cup mixed greens
  • dressing: 3 tbsp olive oil , 2 tbsp balsamic vinegar, 1 tsp honey, salt and pepper

Instructions

    Roast beets wrapped in foil at 400°F for 45-60 minutes until tender.
