Ingredients

  • 5.00 lb pork shoulder
  • 2.00 tbsp brown sugar
  • 1.00 tbsp paprika
  • 1.00 tsp garlic powder
  • 1.00 tsp onion powder
  • 1.00 tsp salt
  • 1.00 tsp black pepper
  • 0.50 tsp cayenne
  • wood chips for smoking
  • barbecue sauce

Instructions

    Mix all spices and rub all over pork shoulder.

    Wrap and refrigerate overnight.

    Soak wood chips in water 30 minutes.

    Set up smoker at 225°F.

    Smoke pork shoulder 1 1/2 hours per pound, about 7-8 hours, until internal temperature reaches 195-205°F.

    Rest wrapped in foil 1 hour.

    Shred with two forks.
