Chicken Gumbo
A rich Cajun gumbo with chicken, andouille sausage, and okra over rice.
Ingredients
- 1.00 whole chicken , cut up
- 0.50 cup all-purpose flour
- 0.50 cup vegetable oil
- 1.00 onion , diced
- 1.00 g reen bell pepper , diced
- 3.00 stalks celery , diced
- 4.00 cup loves garlic , minced
- 1.00 lb okra , sliced
- 1.00 cup an tomatoes
- 8.00 cup chicken broth
- cajun seasoning , salt, and pepper
- cooked rice
- filé powder
Instructions

Make a dark roux by cooking flour and oil in a heavy pot over medium heat, stirring constantly, until chocolate brown, about 30-45 minutes.

Add onion, bell pepper, and celery and cook 5 minutes.

Add garlic and cook 1 minute.

Add chicken pieces, okra, tomatoes, and broth.

Season with Cajun seasoning, salt, and pepper.

Simmer 1 1/2 hours until chicken is very tender.

Remove chicken, shred meat, return to pot.

Serve over rice with filé powder if desired.
