Skillet Cornbread
Cast iron skillet cornbread baked golden — perfect alongside eggs and gravy.
Ingredients
- 1.00 cup white cornmeal
- 0.50 cup all-purpose flour
- 1.00 tbsp sugar
- 1.00 tsp baking powder
- 0.50 tsp baking soda
- 0.50 tsp salt
- 1.00 cup buttermilk
- 1.00 l arge egg
- 3.00 tbsp bacon drippings or butter

Preheat oven to 425°F.

Place a 10-inch cast iron skillet in oven with 1 tbsp fat to heat.

Mix cornmeal, flour, sugar, baking powder, baking soda, and salt.

Whisk together buttermilk, egg, and remaining 2 tbsp fat.

Stir wet into dry until just combined.

Carefully remove hot skillet and pour in batter.

Bake 18-22 minutes until golden and a toothpick comes out clean.
