Boiled Peanuts
Green peanuts slow boiled in salted water until tender — a Southern roadside staple.
Ingredients
- 2.00 lb raw peanuts in shell
- 0.25 cup salt
- water to cover
Instructions

Place raw peanuts in a large pot.

Cover with water and add salt.

Bring to a boil.

Reduce heat and simmer 2-4 hours until peanuts are soft.

Add water as needed to keep peanuts submerged.

Taste periodically and add more salt if needed.

Drain and serve warm.

Store in brine in the refrigerator.
