Red Eye Gravy
A true Southern classic — coffee and country ham drippings made into a bold gravy.
Ingredients
- 4.00 slice country ham
- 1.00 cup strong black coffee
- 2.00 tbsp butter
- salt and pepper
Instructions

Fry country ham slices in a skillet over medium-high heat until browned on both sides.

Remove ham and set aside.

With the pan still over heat, carefully pour in black coffee, scraping up any browned bits.

Simmer 3-5 minutes until slightly reduced.

Stir in butter.

Season with salt and pepper.

Serve poured over ham and biscuits.
