Pork and Sauerkraut
Pork shoulder slow cooked with sauerkraut — a Southern New Year's tradition.
Ingredients
- 3.00 lb pork shoulder or loin
- 2.00 cup ans sauerkraut
- 1.00 onion , sliced
- 3.00 cup loves garlic , minced
- 1.00 cup apple juice or beer
- 1.00 tbsp brown sugar
- salt , pepper, and caraway seeds to taste

Season pork with salt and pepper.

Brown all over in a Dutch oven.

Remove and set aside.

Sauté onion until softened.

Add garlic and cook 1 minute.

Add sauerkraut, apple juice, brown sugar, and caraway seeds.

Return pork to pot.

Cover and braise at 325°F for 2 1/2 to 3 hours until very tender.

Shred or slice pork and serve with sauerkraut.
