Peach Melba
Fresh peaches with raspberry sauce and vanilla ice cream.
Ingredients
- 4.00 ripe peaches peeled and halved
- 1.00 cup sugar
- 2.00 cup water
- 1.00 tsp vanilla extract
- raspberry sauce: 2 cups fresh raspberries , 1/4 cup sugar, 1 tbsp lemon juice
- vanilla ice cream

Poach peach halves in simmering sugar-water with vanilla for 5-7 minutes until just tender.

Cool in poaching liquid.

Make raspberry sauce by cooking raspberries with sugar and lemon juice until berries break down.

Strain through a sieve.

To serve: place a scoop of vanilla ice cream in a bowl.

Arrange 2 poached peach halves alongside.

Drizzle generously with raspberry sauce.
