Coconut Cake
A tall fluffy white cake covered in freshly grated coconut.
Ingredients
- 3.00 cup all-purpose flour
- 1.00 tbsp baking powder
- 0.50 tsp salt
- 1.00 cup butter
- 2.00 cup sugar
- 5.00 l arge eggs
- 1.00 cup whole milk
- 1.00 tsp vanilla
- 1.00 tsp coconut extract
- frosting: 1 cup butter , 8 oz cream cheese, 4 cups powdered sugar, 1 tsp vanilla
- 2.00 cup sweetened coconut for coating

Preheat oven to 350°F and grease three 9-inch pans.

Cream butter and sugar until fluffy.

Beat in eggs one at a time.

Alternate adding flour mixture and milk, beginning and ending with flour.

Stir in vanilla and coconut extract.

Divide among pans and bake 25-30 minutes.

Cool completely.

Make frosting by beating butter and cream cheese until fluffy then mixing in powdered sugar and vanilla.

Frost cake and press coconut all over outside.

Refrigerate until ready to serve.
