Keto Southern Fried Chicken
Crispy golden fried chicken with a pork rind and almond flour crust — all the crunch of the classic with zero guilt.
Ingredients
- 2.00 lbs chicken thighs and drumsticks
- 1.00 cup pork rind crumbs
- 1.00 cup almond flour
- 1.00 tsp garlic powder
- 1.00 tsp onion powder
- 1.00 tsp smoked paprika
- 1.00 tsp cayenne pepper
- 1.00 tsp salt
- 1.00 tsp black pepper
- 2.00 eggs beaten
- 1.00 cup heavy cream
- 0.00 Avocado oil for frying

Pat chicken dry with paper towels and season with salt and pepper.

Whisk eggs and heavy cream together in a shallow bowl.

Combine pork rind crumbs almond flour garlic powder onion powder paprika cayenne salt and pepper in a second bowl.

Dip each piece of chicken in the egg wash then press firmly into the pork rind mixture coating all sides.

Heat 1 inch of avocado oil in a cast iron skillet over medium-high heat to 350F.

Fry chicken in batches 10 to 12 minutes per side until deep golden brown and internal temp reaches 165F.

Drain on a wire rack and rest 5 minutes before serving.
