Keto Smothered Pork Chops
Thick bone-in pork chops slow cooked in a rich onion and mushroom gravy. Pure Southern soul food gone keto.
Ingredients
- 4.00 bone-in pork chops about 1 inch thick
- 2.00 cups mushrooms sliced
- 1.00 medium onion sliced thin
- 3.00 cloves garlic minced
- 1.00 cup chicken broth
- 1.00 cup heavy cream
- 2.00 tbsp butter
- 1.00 tsp xanthan gum
- 1.00 tsp garlic powder
- 1.00 tsp onion powder
- 0.00 Salt and black pepper to taste
- 0.00 Fresh thyme
Instructions

Season pork chops on both sides with garlic powder onion powder salt and pepper.

Melt butter in a cast iron skillet over medium-high heat.

Sear pork chops 3 to 4 minutes per side until golden brown then remove and set aside.

Cook onions and mushrooms in the same skillet 5 minutes until softened.

Add garlic and thyme and cook 1 minute more.

Pour in chicken broth and heavy cream and bring to a simmer.

Whisk in xanthan gum and cook until gravy thickens about 3 minutes.

Return pork chops to skillet cover and simmer 15 minutes until cooked through.

Serve smothered in gravy.
