Keto Shrimp and Cauliflower Grits
Creamy cauliflower stands in for grits in this Low Country classic. Loaded with shrimp bacon and sharp cheddar.
Ingredients
- 1.00 lb large shrimp peeled and deveined
- 1.00 head cauliflower cut into florets
- 4.00 oz cream cheese softened
- 1.00 cup sharp cheddar shredded
- 4.00 strips bacon chopped
- 3.00 cloves garlic minced
- 2.00 tbsp butter
- 1.00 cup chicken broth
- 1.00 tsp Cajun seasoning
- 0.00 Salt and pepper to taste
- 2.00 green onions sliced
Instructions

Steam cauliflower until very tender about 10 minutes then drain well.

Mash cauliflower with cream cheese butter and cheddar until smooth and creamy. Season with salt and pepper and keep warm.

Cook bacon in a large skillet until crispy then remove leaving drippings in pan.

Add garlic to drippings and cook 1 minute until fragrant.

Add shrimp and Cajun seasoning and cook 2 minutes per side until pink.

Pour in chicken broth and simmer 2 minutes scraping up any bits.

Spoon cauliflower grits into bowls top with shrimp and sauce then finish with bacon and green onions.
