Keto Chicken Bog
A South Carolina Low Country classic — chicken smoked sausage and cauliflower rice in a rich savory one-pot broth.
Ingredients
- 2.00 lbs chicken thighs bone-in
- 1.00 lb smoked sausage sliced
- 1.00 head cauliflower riced
- 4.00 cups chicken broth
- 1.00 onion diced
- 3.00 cloves garlic minced
- 2.00 stalks celery diced
- 1.00 tsp smoked paprika
- 1.00 tsp onion powder
- 0.00 Salt and black pepper to taste
- 0.00 Fresh parsley chopped
Instructions

Place chicken thighs in a large pot with chicken broth onion celery garlic paprika and onion powder.

Bring to a boil then reduce heat and simmer covered 25 minutes until chicken is cooked through.

Remove chicken let cool then shred off the bone discarding skin and bones.

Return broth to a simmer and add sliced sausage. Cook 5 minutes.

Add riced cauliflower and cook 8 minutes until tender.

Return shredded chicken to the pot and stir everything together.

Season generously with salt and pepper.

Simmer uncovered 5 more minutes until broth reduces slightly.
