Ingredients

  • 2.00 lbs chicken thighs bone-in
  • 1.00 lb smoked sausage sliced
  • 1.00 head cauliflower riced
  • 4.00 cups chicken broth
  • 1.00 onion diced
  • 3.00 cloves garlic minced
  • 2.00 stalks celery diced
  • 1.00 tsp smoked paprika
  • 1.00 tsp onion powder
  • 0.00 Salt and black pepper to taste
  • 0.00 Fresh parsley chopped

Instructions

    Place chicken thighs in a large pot with chicken broth onion celery garlic paprika and onion powder.

    Bring to a boil then reduce heat and simmer covered 25 minutes until chicken is cooked through.

    Remove chicken let cool then shred off the bone discarding skin and bones.

    Return broth to a simmer and add sliced sausage. Cook 5 minutes.

    Add riced cauliflower and cook 8 minutes until tender.

    Return shredded chicken to the pot and stir everything together.

  7. 7

    Season generously with salt and pepper.

    Simmer uncovered 5 more minutes until broth reduces slightly.

    Serve in bowls topped with fresh parsley.
