  • 0.25 cup sugar
  • 1.00 tbsp baking powder
  • 0.50 tsp salt
  • 1.00 cup buttermilk
  • 2.00 l arge eggs
  • 0.33 cup vegetable oil
  • 2.00 jalapeños , seeded and diced
  • 1.00 cup cheddar cheese

Instructions

    Preheat oven to 400°F and grease a 9x9 baking dish or cast iron skillet.

    Whisk together cornmeal, flour, sugar, baking powder, and salt.

    In another bowl whisk buttermilk, eggs, and oil.

    Stir wet into dry until just combined.

    Fold in jalapeños and cheese.

    Pour into prepared pan.

    Bake 20-25 minutes until golden and a toothpick comes out clean.
