Ingredients

  • 2.00 lb fresh pork skin , cleaned
  • 1.00 tbsp salt
  • vegetable oil for frying
  • cajun seasoning or salt for finishing

Instructions

    Cut pork skin into 2-inch pieces.

    Boil in salted water 1 hour until tender.

    Drain and let cool completely.

    Spread on a rack and dry in the refrigerator overnight.

    Heat oil to 400°F.

    Fry dried pork skin in batches — it will puff up dramatically, about 30-60 seconds.

    Remove when puffed and golden.

    Season immediately with Cajun seasoning or salt.
