Fried Ice Cream
Vanilla ice cream coated in cornflakes and fried golden — a Southern treat.
Ingredients
- 1.00 qt vanilla ice cream
- 2.00 cup crushed cornflakes or graham crackers
- 2.00 tbsp sugar
- 1.00 tsp cinnamon
- 2.00 eggs
- oil for frying
- whipped cream honey and cherries

Scoop ice cream into large balls.

Freeze on a baking sheet until very firm, at least 2 hours.

Mix crushed cornflakes with sugar and cinnamon.

Roll ice cream balls in crumb mixture.

Dip in beaten egg then roll in crumbs again.

Freeze again at least 1 hour.

Heat oil to 375°F.

Fry ice cream balls one at a time for 30-45 seconds only until coating is golden.

Do not let them melt.

Serve immediately with whipped cream and honey.
