Sweet Potato and Black Bean Soup
A hearty vegetarian soup with sweet potato, black beans, and Cajun spices.
Ingredients
- 2.00 l arge sweet potatoes , peeled and diced
- 1.00 cup an black beans , drained
- 1.00 onion , diced
- 3.00 cup loves garlic , minced
- 1.00 cup an tomatoes
- 4.00 cup vegetable or chicken broth
- 1.00 tsp cumin
- 0.50 tsp chili powder
- salt and pepper
- sour cream and cilantro
Instructions

Sauté onion in a large pot until softened.

Add garlic and cook 1 minute.

Add sweet potatoes, black beans, tomatoes, broth, cumin, and chili powder.
