Cornbread Muffins
Individual golden cornbread muffins with crispy edges and a tender crumb.
Ingredients
- 1.00 cup yellow cornmeal
- 1.00 cup all-purpose flour
- 0.25 cup sugar
- 1.00 tbsp baking powder
- 0.50 tsp salt
- 1.00 cup buttermilk
- 2.00 l arge eggs
- 0.33 cup vegetable oil

Preheat oven to 400°F and grease a 12-cup muffin tin.

Whisk together cornmeal, flour, sugar, baking powder, and salt.

In another bowl whisk buttermilk, eggs, and oil.

Stir wet into dry until just combined — do not overmix.

Fill muffin cups 2/3 full.

Bake 15-18 minutes until golden and a toothpick comes out clean.

Cool 5 minutes then serve warm.
