Divinity Candy
A fluffy white candy made with sugar syrup and egg whites.
Ingredients
- 2.50 cup sugar
- 0.50 cup light corn syrup
- 0.50 cup water
- 2.00 l arge egg whites
- 1.00 tsp vanilla extract
- 1.00 cup pecans

Cook sugar, corn syrup, and water in a heavy saucepan over medium heat, stirring until sugar dissolves.

Continue cooking without stirring until mixture reaches 265°F on a candy thermometer.

Meanwhile beat egg whites until stiff peaks form.

Slowly pour hot syrup in a thin stream over beaten egg whites, beating constantly.

Beat until candy holds its shape and loses its gloss, about 5-7 minutes.

Stir in vanilla and pecans.

Drop by rounded spoonfuls onto wax paper.

Let set until firm.
