Creole Potato Salad
A Creole spin on potato salad with mustard, celery, and Cajun spices.
Ingredients
- 6.00 medium potatoes , boiled and diced
- 0.50 cup mayonnaise
- 2.00 tbsp creole mustard
- 0.25 cup celery
- 0.25 cup onion
- 2.00 hard boiled eggs , diced
- 1.00 tsp cajun seasoning
- salt and pepper
- paprika
Instructions

Boil potatoes until just tender and cool completely.

Mix mayonnaise and Creole mustard together.

Combine with potatoes, celery, onion, and eggs.

Season with Cajun seasoning, salt, and pepper.
