Squash Casserole Soup
Yellow squash soup inspired by the classic Southern casserole.
Ingredients
- 4.00 cup yellow squash , diced
- 1.00 onion , diced
- 3.00 cup loves garlic , minced
- 4.00 cup chicken broth
- 1.00 cup sour cream
- 1.00 cup cheddar cheese
- 2.00 tbsp butter
- salt and pepper
- croutons
Instructions

Melt butter in a large pot over medium heat.

Sauté onion until softened.

Add garlic and cook 1 minute.

Add squash and broth and bring to a boil.

Simmer 20 minutes until squash is very tender.

Blend soup until smooth using an immersion blender.

Stir in sour cream and cheddar cheese.

Season with salt and pepper.
