Persimmon Cookies
Soft spiced cookies made with wild persimmon pulp.
Ingredients
- 1.00 cup ripe persimmon pulp
- 1.00 cup sugar
- 0.50 cup butter
- 1.00 l arge egg
- 2.00 cup all-purpose flour
- 1.00 tsp baking soda
- 1.00 tsp cinnamon
- 0.50 tsp cloves
- 0.25 tsp nutmeg
- 0.50 tsp salt
- 1.00 cup raisins
- 1.00 cup pecans

Preheat oven to 350°F.

Cream butter and sugar until fluffy.

Beat in egg and persimmon pulp.

Mix flour with baking soda, cinnamon, cloves, nutmeg, and salt.

Stir into persimmon mixture.

Fold in raisins and pecans.

Drop by rounded tablespoons onto greased baking sheets.

Bake 12-15 minutes until set.

Cool on sheets 5 minutes before moving.
