Collard Green and Sausage Stew
Smoked sausage and collard greens simmered in a hearty pot of broth.
Ingredients
- 1.00 lb smoked sausage , sliced
- 2.00 bunches collard greens , chopped
- 1.00 onion , diced
- 4.00 cup loves garlic , minced
- 1.00 cup an white beans , drained
- 6.00 cup chicken broth
- salt , pepper, and red pepper flakes to taste

Brown sausage in a large pot.

Remove and set aside.

Sauté onion in drippings until softened.

Add garlic and cook 1 minute.

Add broth and bring to a boil.

Add collard greens and white beans.

Return sausage to pot.

Season with salt, pepper, and red pepper flakes.

Simmer 45 minutes until greens are very tender.
