Chicken and Okra Gumbo
A classic gumbo with chicken, okra, and Cajun seasonings over rice.
Ingredients
- 2.00 lb chicken pieces
- 1.00 lb fresh okra , sliced
- 0.50 cup vegetable oil
- 0.50 cup all-purpose flour
- 1.00 onion , diced
- 1.00 bell pepper , diced
- 3.00 stalks celery , diced
- 4.00 cup loves garlic , minced
- 6.00 cup chicken broth
- cajun seasoning , salt, and pepper
- cooked rice
Instructions

Make a dark roux by cooking flour and oil over medium heat, stirring constantly, for 30-45 minutes until chocolate brown.

Add onion, bell pepper, and celery and cook 5 minutes.

Add garlic and okra and cook 5 more minutes.

Add chicken and broth.

Season with Cajun seasoning.

Simmer 1 hour until chicken is very tender.

Remove chicken, shred meat, return to pot.

Adjust seasoning.

Serve over rice.
