Beef and Vegetable Soup
A hearty Southern beef soup loaded with vegetables and served with cornbread.
Ingredients
- 2.00 lb beef stew meat
- 1.00 onion , diced
- 3.00 cup arrots , sliced
- 3.00 stalks celery , diced
- 3.00 potatoes , diced
- 1.00 cup frozen corn
- 1.00 cup frozen green beans
- 1.00 cup an tomatoes
- 8.00 cup beef broth
- salt , pepper, and thyme to taste
Instructions

Brown beef in a large pot over high heat.

Add onion and cook 3 minutes.

Add all remaining ingredients.

Bring to a boil then reduce heat.

Simmer 1 1/2 to 2 hours until beef and vegetables are very tender.

Season with salt, pepper, and thyme.
