Appalachian Stack Cakes
Thin spiced cake layers stacked with dried apple filling — a mountain tradition.
Ingredients
- 3.00 cup all-purpose flour
- 0.50 cup sugar
- 1.00 tsp baking powder
- 1.00 tsp baking soda
- 0.50 tsp salt
- 0.50 cup butter
- 0.50 cup buttermilk
- 1.00 l arge egg
- 0.25 cup sorghum syrup
- 2.00 cup dried apple filling

Preheat oven to 350°F.

Mix flour, sugar, baking powder, baking soda, and salt.

Cut in butter until crumbly.

Stir in buttermilk, egg, and sorghum syrup until dough forms.

Divide into 6 equal portions.

On a floured surface roll each portion into a thin 8-inch round.

Bake each round on a greased baking sheet for 10-12 minutes until set.

Cool completely.

Stack layers with dried apple filling spread between each layer.

Wrap tightly and let sit overnight before serving — the layers will soften.
