Southern Corned Beef Hash
Crispy corned beef hash with diced potatoes and onions topped with a fried egg.
Ingredients
- 1.00 cup an corned beef
- 4.00 medium potatoes , cooked and diced
- 1.00 onion , diced
- 1.00 g reen bell pepper , diced
- 2.00 cup loves garlic , minced
- 3.00 tbsp vegetable oil
- salt and pepper
- 4.00 l arge eggs

Heat oil in a large cast iron skillet over medium-high heat.

Add onion and bell pepper and cook until softened, about 5 minutes.

Add garlic and cook 1 minute.

Add diced cooked potatoes and cook until starting to crisp, about 5 minutes.

Crumble in corned beef and mix everything together.

Press into an even layer and cook without stirring until bottom is crispy, about 5 minutes.

Flip sections and continue cooking.

Make wells and fry eggs directly in the hash.
