Ingredients

  • 4.00 cup whole milk
  • 1.00 cup heavy cream
  • 6.00 l arge egg yolks
  • 1.00 cup sugar
  • 2.00 tsp vanilla extract
  • pinch of salt

Instructions

    Whisk egg yolks with sugar until pale and thick.

    Heat milk and cream in a heavy saucepan until steaming but not boiling.

    Slowly pour hot milk over egg yolk mixture, whisking constantly to temper.

    Return mixture to saucepan.

    Cook over medium-low heat, stirring constantly, until custard thickens enough to coat a spoon.

    Do not boil or it will curdle.

    Remove from heat and stir in vanilla and salt.

    Strain through a fine sieve.

    Cool then refrigerate.
