Mississippi Mud Cake
A rich chocolate cake topped with marshmallows and chocolate frosting.
Ingredients
- 1.00 cup butter
- 0.50 cup cocoa powder
- 4.00 l arge eggs
- 2.00 cup sugar
- 1.50 cup all-purpose flour
- 1.00 tsp vanilla
- 1.00 cup pecans
- 3.00 cup miniature marshmallows
- frosting: 1/2 cup butter , 1/3 cup cocoa, 6 tbsp whole milk, 4 cups powdered sugar, 1 tsp vanilla

Preheat oven to 350ยฐF and grease a 9x13 pan.

Melt butter and cocoa together.

Beat in eggs and sugar.

Stir in flour and vanilla.

Fold in pecans.

Pour into pan.

Bake 30-35 minutes.

Remove from oven and immediately spread marshmallows over hot cake.

Return to oven 3 minutes until marshmallows puff.

Make frosting by melting butter with cocoa and milk, then whisking in powdered sugar and vanilla.

Pour warm frosting over marshmallows immediately.

Cool completely before cutting.
