Peanut Brittle
Old fashioned homemade peanut brittle cooked to a golden crunch.
Ingredients
- 2.00 cup sugar
- 1.00 cup light corn syrup
- 0.50 cup water
- 2.00 cup raw peanuts
- 2.00 tbsp butter
- 2.00 tsp vanilla extract
- 2.00 tsp baking soda
- 1.00 tsp salt
Instructions

Butter two large baking sheets.

Combine sugar, corn syrup, and water in a heavy saucepan.

Cook over medium heat stirring until sugar dissolves.

Add peanuts.

Cook without stirring until mixture reaches 300ยฐF on a candy thermometer.

Remove from heat immediately.

Stir in butter, vanilla, baking soda, and salt โ mixture will foam up.

Quickly pour onto prepared baking sheets.

Spread thin with a buttered spatula.

Cool completely until hard.

Break into pieces.

Store in airtight container.
