Fried Green Tomatoes
Cornmeal crusted green tomatoes fried golden and served with remoulade.
Ingredients
- 4.00 l arge green tomatoes , sliced 1/2 inch thick
- 1.00 cup cornmeal
- 0.50 cup all-purpose flour
- 1.00 tsp salt
- 1.00 tsp black pepper
- 0.50 tsp cayenne
- 2.00 eggs
- vegetable oil for frying
Instructions

Mix cornmeal, flour, salt, pepper, and cayenne in a shallow dish.

Dip tomato slices in beaten egg.

Dredge in cornmeal mixture, pressing to coat well.

Heat 1/2 inch of oil in a cast iron skillet over medium-high heat.

Fry tomatoes 3 minutes per side until golden brown.

Work in batches and do not overcrowd.

Drain on paper towels.

Serve immediately while hot and crispy.
